This week has been crazy busy and emotional for me: It is back to school week! I have been on a roller coaster of all kind of emotions, total eclipse for me!
So time this week in particular wasn't on my side, actually it was kinda running away from me lol and the more I try to catch up on things the more I feel overwhelmed by what is still left to do!
Any mamas out there who can relate?
When it comes to putting food on the table, I have couple of dishes that I call food express! They are super easy to make and require minimum time preparation; today was one of those days, I had 30 minutes to prepare lunch before I go get Divina from school!
By the time I looked at my phone to check the time, I receive a text message, one of my friends is at the hospital, Omg! that is so horrible, we talked and I imagined if that happened to me, what will the kids do , or my husband, what about my work... yes there are always scenarios running in my head! pretty crazy stuff! Okay 25 minutes are left!
What to make that is quick, easy and the kids love?...... Tacos!! they definitely are a family favorite, we usually feast on pinto bean tacos, but this time I wanted to change or more precisely I didn't have pinto beans, or any other kind of beans than chickpeas!
So here's what I made,
Ingredients:
1 tbsp of avocado oil
2 cups of cooked chickpeas or 1 can
3 cloves of garlic, minced
1 tsp of cumin powder
1/4 tsp onion powder
Pinch of cayenne pepper
2 tbsp liquid aminos of shoyu
To assemble your tacos:
Mini Corn tortilla
Vegan Mayo (veganaise)
Green tomatoes or any tomatoes
Avocado slices
Parsley leaves
Lime
Guidance:
In a medium size skillet, heat the avocado oil until shimmering on medium heat.
Add the garlic and sauté for 30 seconds to a minute, stirring frequently.
Add the chickpeas and sauté for a minute.
Add the seasonings, stir and let simmer for 5 to 10 minutes.
heat the tortilla in the oven or on a griddle for a minute or until soft enough.
To assemble your tacos, spread some vegan Mayo on the tortilla, add the refried chickpeas, avocado slices, parsley leaves, tomatoes, sprinkle some more cayenne pepper and cumin powder, a squeeze of lime and enjoy!
