People often think I only eat vegetables, fruits and weird superfoods (lol), but the truth is, I Love indulging in comfort food and I enjoy it to the max because once you cook comfort food consciously, you have no room left for discomfort and then guilt around food.
Not that you should ever feel guilty around food or anything else in life, guilt is just the perfect way to feel stuck in whatever you are doing, feeling, eating, saying etc..
Whatever you do, own it, even when you eat food that is labeled "unhealthy" , do not feel guilt or shame, instead take the pleasure you were seeking out of it and be more conscious of your choices in the future.
Today I wanted to recreate a healthier version of Mac n cheese without using any dairy of course but I wanted it to be as close to the real deal as possible, do you think I succeeded? You will have to tell me after you try this recipe!

Ingredients:
To make the sauce:
3 cloves garlic, minced
1/2 vegan butter stick (4 tbsp approx)
3 tbsp arrowroot powder
3 cups soy milk
1 tsp sea salt (or to taste)
1/8 tsp turmeric
1/8 tsp black pepper
3 tbsp nutritional yeast
3/4 cup shredded vegan cheese ( I used daiya mozzarella cheese, but you can also use any other vegan cheese)

16 oz brown rice pasta shells (or any other pasta you like)

Basil leaves
Red pepper flakes
Guidance:
First we start by making the vegan roux.
Melt and heat the butter on medium heat in a medium pot.
Sauté the garlic until light golden brown for about a minute.
Add the arrowroot flour and stir continuously for a minute.
Add the milk & keep whisking, bringing to a boil on high heat.
Once it starts boiling, reduce flame to low & keep whisking until the mixture thickens.
Add the seasonings, nutritional yeast and let simmer for 10 minutes or until the cheese melts completely and it is ready to serve. You can blend before adding to your pasta, but it is not necessary ( I didn't).
Meanwhile cook your pasta accordingly to the package instructions.
Rinse the pasta with water to stop the cooking process, drain and return the pot.
Pour the sauce over the pasta and mix gently until all the pasta is covered with the stretchy cheesy sauce.
Serve with basil leaves and red pepper flakes to taste.
